Mormons have a baked-in myth of resistance against religious intolerance. Whatever you think of their record, it seems that they think of themselves as sticking up for anyone who is discriminated against for being in a religious minority. Trump's anti-Muslim sentiments play about as well with that demographic as "let's lock up all the scientists, they only give us bad news" would play with (say) me. So that's a traditionally Republican demographic that Trump has alienated, concentrated in Utah.
I'd add that Mormons value civility a lot, tend to attend religious services more often than most Trump voters, and are often Republicans-and-conservatives-per-se (Cruz types) and have that hate for him.
It's very unlikely, but it feels more likely to me than Mississippi or something.
